Energy Bites remind me of a healthier version of no-bake cookies so I loved adapting this recipe from Living Well Mom. I switched out the almond flour for Kashi Sun-up Coconut Protein Powder. Throw all the ingredients in the food processor until combined and roll into small balls and refrigerate.
1 cup shredded coconut, unsweetened
4 Tbsp Kashi Sun-up Coconut Protein Powder
2 Tbsp maple syrup, more or less to taste*
1 Tbsp coconut oil
1 Tbsp matcha green tea
